Ingredients

  • 2 cups pure icing sugar
  • 3 cups desiccated coconut
  • 1 teaspoon vanilla paste
  • 395g can sweetened condensed milk
  • ¼ teaspoon pink food colouring (or choose green and red to make Christmas colours)

Instructions

  1. Grease and line a loaf pan (24 × 13 × 6.5cm) with baking paper, leaving the sides overhanging for easy removal.
  2. Sift icing sugar into a large bowl. Add coconut, vanilla and condensed milk. Stir well until fully combined.
  3. Split the mixture evenly between two bowls.
  4. Add pink colouring to one bowl and mix until the shade is even.
  5. Press the white mixture firmly into the base of the tin. Smooth the surface with the back of a spoon.
  6. Gently press the pink layer on top and smooth the surface.
  7. Refrigerate for 2-3 hours or until completely set.
  8. Lift out using the baking paper. Slice into even squares.

  • Even colour: Start with 1–2 drops of food colouring and build up for that perfect soft-pink finish.
