Ingredients
- 2 cups pure icing sugar
- 3 cups desiccated coconut
- 1 teaspoon vanilla paste
- 395g can sweetened condensed milk
- ¼ teaspoon pink food colouring (or choose green and red to make Christmas colours)
Instructions
- Grease and line a loaf pan (24 × 13 × 6.5cm) with baking paper, leaving the sides overhanging for easy removal.
- Sift icing sugar into a large bowl. Add coconut, vanilla and condensed milk. Stir well until fully combined.
- Split the mixture evenly between two bowls.
- Add pink colouring to one bowl and mix until the shade is even.
- Press the white mixture firmly into the base of the tin. Smooth the surface with the back of a spoon.
- Gently press the pink layer on top and smooth the surface.
- Refrigerate for 2-3 hours or until completely set.
- Lift out using the baking paper. Slice into even squares.

- Even colour: Start with 1–2 drops of food colouring and build up for that perfect soft-pink finish.
